100 % Ibérico pigs are carefully selected and reared on an extensive, free-range system, fed by nutritious grasses and acorns during the “montanera” fattening period, and provides an Ibérico ham of established worldwide fame.

100 % Ibérico de bellota, or “acorn-fed” 100 % Ibérico ham, is currently acknowledged by experts as the best ham in the world.

After almost two years of stay in the dehesas of Sierra Morena, pigs are scarified and the hams are subjected to a salting process followed by a resting period. Later they go on to a curing process in our cellars (outside the town of Cumbres Mayores, in the south of Spain), for a period of no less than 40 months, under the most careful attention of our Maestro Jamonero (master ham craftsman), so that we can offer an exquisite, top quality product.
